A spontaneous fermentation collaboration with Take 16 Brewing Company. Wort was run down 40 feet of ponderosa pine into a 200-gallon cool ship to pick up microflora and wild yeast. Aged in barrels at both breweries, waxed, numbered, and hand bottled. Limited run using farm’s Lambic hops for a true field-to-glass experience.
